Grilled Scallops in vanilla marinade with pea purée, fish roe, citrus-fennel salad, and miso cream

Smoked Duck Breast with pickled beetroot, chanterelle mushrooms, fresh salad, blackcurrant oil, and smoked cream sauce

Grilled Venison Fillet with parsnip purée, pickled mushrooms, apple-celery salad, red wine sauce, and buckwheat crisp

Lamb Rack in vanilla-mint marinade with pesto pasta, fresh arugula, glazed carrot, garlic white wine sauce, and crushed pistachios

Hot-Smoked Golden Cod with parsnip purée, saffron-fennel cream, blanched Romanesco, and Romanesco stem chips
