King prawns in tomato–sherry sauce with olive dust, lemon–cucumber relish and garlic olive crostini

Escargots in garlic butter with celery cream, parsley oil, pickled yellow beet and mushroom crisp

Venison tartare with sherry–lingonberry gel, garlic aioli, apple–celery salad and buckwheat popcorn

Main Courses

Seafood pasta in champagne cream sauce with shrimp, tuna, mussels, smoked squid, arugula and squid crisp

Beef fillet with Spanish potatoes, brava sauce, padrón peppers, garlic aioli and sherry–blackcurrant gel

Tuna steak in sesame soy sauce with mozzarella–parmesan arancini, carrot–cabbage kimchi, miso cream and seaweed

Dessert

Mango–mascarpone and lemon cream tartlet with meringue and fresh berries
