APPETIZER
Selection of bruschettas – classic with tomato and basil, crispy goat cheese with pistachios, honey and pesto, and prosciutto crudo with ricotta cream and fresh fig
Salmon rillette and garlic prawns with pistachio–feta cream, seaweed, quail egg and crispy bread slice
Vitello tonnato – thinly sliced veal with anchovy cream, fresh salad, capers, Parmesan crisp and herb oil
MAIN COURSE
Grilled sea bass fillet with Parmesan and mozzarella arancini, pumpkin purée, truffle béchamel sauce, pomegranate seeds and citrus salad
Grilled lamb rack in a vanilla–mint marinade with pesto pasta, feta–mint–pistachio cream, fresh rocket, glazed carrot, Parmesan and garlic white wine sauce
Veal entrecôte with saffron Parmesan sauce, lightly garlicky potato gratin, glazed carrot, black garlic–lingonberry gel and courgette salad
DESSERT
Panna cotta with raspberry coulis, caramelised white chocolate, prosecco pearls and fresh berries
